I don't know dogs, but we took a friend's dog out for a walk in the summer, and he seemed to love it when (still on the lead) I picked the pace up to a sprint for 100 yards ahead of everyone else, then turned round and ran back again :) Quite a simple game really, probably closely related to run-around-the-garden.
