Aubergine/pepper/potato/lentil bake

1 aubergine
1 red pepper
4 medium potatoes
1 medium onion, sliced
2 cloves garlic, chopped
Lentils (probably around 4oz? not sure)
Tin chopped tomatoes
Hefty splash of wine (optional)
thyme, rosemary, salt, pepper, to taste
olive oil
Fry up the onion & garlic until soft. Add lentils, tomatoes, wine, & herbs, and simmer, adding water as necessary, until lentils are cooked. It wants to be pourable-sauce thickness when done.
Meanwhile, slice up the aubergine, pepper, & potatoes, and grill them (brushed with a little oil) for a few minutes each side, until slightly browned.
Once veg & sauce are done, get a deep oven-suitable pan. Put a layer of potatoes on the bottom, add a layer of aubergine & pepper, pour half the sauce over. Further layer of aubergine & pepper, pour over rest of sauce. Put rest of potatoes on top, and brush them with a little marg. (layers entirely variable dependent on size of pan, quantity of veg, etc) Bake in the oven at around 200degC until done - probably around 20-30min.
I get the rest of this for lunch today, hurrah.
